PASTA WITH CAPERS AND BLACK OLIVES

Ingredients for 4 people

280 grams of Pasta Garofalo Elicoidali (check on website http://www.pastagarofalo.it/us_en/
800 grams chopped potatoes
2 tablespoons of capers
20 black olives
4 anchovy fillets
1 clove of garlic
5 tablespoons of olive oil
chilli pepper
salt 


Procedure
Pour 5 tablespoons of oil in a pan, add the clove of garlic, the capers, the anchovy and the black olives. 
Leave it on heat for about 10-12 minutes, medium heat, stirring occasionally.
When the anchovies seem to be melted you can add the chopped tomatoes and the salt (not too much because the anchovies are already very salty by themselves)

Leave it on low/medium heat for about 20 minutes and when the chopped tomates have become less aqueous you can turn off the heat.

In the meantime you need to prepare the pasta and when it is done drain it and add to the pan with the sauce. Put the pan on the heat for about one minute, stirring continuosly.

Now you can serve and you can add some parsley if you and your guests like.

Please be aware that once your guests try this recipe they will not leave you alone.....anymore!
